What you get with your order of beef

IMPORTANT: The specifics about what you take home will vary depending on the size of the beef and the cuts ordered. The below information was compiled based upon prior orders and is intended to give you a general idea of what you might expect so you can plan accordingly.

Quarter: Take home weight for a quarter of beef will be approximately 90-110 lbs. This will likely require 3-3.5 cubic feet of freezer space.

  • T-bone, Porterhouse, and/or New York Strip…9-10 @ 3/4 inch thick
  • Sirloin steak…6-8 @ 3/4 inch thick
  • Ribeye steak…9-10 @ 3/4 inch thick
  • Round steak (or cube steak or round roasts)…7-8 lbs
  • Chuck roast…2-3 @ 2.5 lbs each
  • Arm roast…3-4 @ 2.5 lbs each
  • Sirloin tip roast…1 @ 3.5 lbs
  • Ground beef…approximately 45-50 lbs

Half (side of beef): Take home weight for a half of beef will be approximately 180-220 lbs. This will likely require 7-8 cubic feet of freezer space.

  • T-bone, Porterhouse, and/or New York Strip…18-20 @ 3/4 inch thick
  • Sirloin steak…14-16 @ 3/4 inch thick
  • Ribeye steak…18-20 @ 3/4 inch thick
  • Round steak (or cube steak or round roasts)…14-16 lbs
  • Chuck roast…4-6 @ 2.5 lbs each
  • Arm roast…6-8 @ 2.5 lbs each
  • Sirloin tip roast…2 @ 3.5 lbs
  • Ground beef…approximately 90-100 lbs

Whole beef: Take home weight for a whole beef will be approximately 360-440 lbs. This will likely require 14-16 cubic feet of freezer space.

  • T-bone, Porterhouse, and/or New York Strip…38-40 @ 3/4 inch thick
  • Sirloin steak…30-32 @ 3/4 inch thick
  • Ribeye steak…38-40 @ 3/4 inch thick
  • Round steak (or cube steak or round roasts)…30-32 lbs
  • Chuck roast…10-12 @ 2.5 lbs each
  • Arm roast…14-16 @ 2.5 lbs each
  • Sirloin tip roast…4 @ 3.5 lbs
  • Ground beef…approximately 180-200 lbs
